Lemon Cookies


My daughter put this together and it is delicious. Just the right amount of lemony goodness!


Lauren's Lemon Cookies
2 eggs
1/2 cup butter
2 teaspoon baking powder
1 cup of granulated sugar
pinch of salt
1 teaspoon of vanilla extract
juice of one lemon
2 cups of flour

Directions: In a mixing bowl, blend all ingredients, with the exception of the flour. Once creamy, add the flour one cup at a time. If the batter is too sticky, add 1 tablespoon of flour at a time. With an ice cream scoop, scoop out lemon batter and form into balls at least 2 inches apart on a greased cookie sheet. Bake in a 350 degree oven for 10-12 minutes. Makes 2 dozen cookies.
