Life, Liberty, and The Pursuit of Chocolate, by, Gina Meyers

 







Chocolate Biscotti


½ cup of cocoa powder

1 teaspoon of baking soda

½ teaspoon of salt

6 Tablespoons of butter, melted

1 cup of sugar

2 eggs

2 cups of flour

1 teaspoon of vanilla extract


Directions: Preheat oven to 350 degrees . In a medium sized bowl, add melted butter, 2 eggs, cocoa powder, sugar, vanilla extract, salt, and baking powder. Mix. Slowly add in the flour. Mix well. Divide the dough in half. Take dough ball and make two dough balls,  flour your hands if you like and take each dough ball and place on a lightly floured well and form each dough ball into slightly flat logs of size 12 inches x 2 inches on the baking pan.

Slow Cooked Pulled Pork Tacos, It's What's For Dinner, by, Cookbook Author, Gina Meyers

 


These easy pork tacos are a one fork "easy" recipe loaded with lots of flavor.

Whether you are getting ready for fall or want to savor something flavorful, this recipe is kickin' it. The perfect Halloween night recipe for your little trick or treaters, 



1 slow cooker, aka, crock pot
3-pound pork loin
1- 19 ounce bottle of Famous Dave's BBQ Sauce, devil's spit
1 cup of water
Optional (1 beef bullion cube- or 1 can of beef broth)
3 to 5 tortillas (corn or flour tortillas) (there is plenty of pork tacos for later, depends upon how hungry you are and your family size)
Cheese (your choice: shredded cheddar, Mexican three cheese, etc.)
Avocado (optional)
Salsa
Lettuce (optional)

Directions: In a slow cooker, for five to seven hours on low, cook your pork loin in a slow cooker. Once it's cooked, it will be very easy to shred the pork, you can even use a fork. Hence the one fork easy recipe, lol. Jokes aside, you may reserve some of the broth, water, barbecue sauce and store the remaining shredded pork in an airtight container such as tupperware or use wrap to cover your pork in a bowl in the fridge.


In a skillet on medium heat, add 1/2 Tablespoon of oil and place your tortilla and cook for about a minute per side until brown, but not burnt (make sure you put the air vent on), with a fork or spatula,  flip the taco over and crisp other side. Place on a paper towel to absorb excess oil. Top your pork taco with your favorite toppings for your taco and enjoy!

Shop and save: If you purchase a large pork loin and cut it into  sections, you are going to have more of a cost savings and it freezes well.
