Tips on Traveling on a dime and with a teenager


Whoever said that you shouldn't act with kids or animals also should have said, you shouldn't travel with teens. Ok, jokes aside, I am going to provide some tips and tricks on not breaking the bank and having an enjoyable holiday while traveling with your teen.

As a single mom, I am always pinching pennies. It actually is a good thing, in my opinion. While we save up for luxurious moments such as our recent Easter Vacation to Barcelona, Spain, we find ways to save before, during, and after our trip (so we can go on other trips- of course).

1) Check out your phone plans. A T& T allows you unlimited talk, text, and data usage for $10.00 per day. T Mobile allows the same thing for $5.00 per day. All airports have free wifi, and most hotels if not all also provide free wifi or a small pay per day plan.

2) Stay hydrated. You are not allowed to have a full water bottle when you go through security at the airport, you are however, allowed to have an empty water bottle or thermos. Avoid the high price of water at the airport, not to mention the very long airport lines to purchase water. Instead, opt to fill your water bottle for free at one of the many water fountains, or water stations (some are clearly marked by the restrooms) though trust me, you'll have to ask around, they aren't easy to find. At the Barcelona airport, for example, the cost of bottled water was 3.60 euros, however, if you traveled down to the bathrooms, which in our case were downstairs, you can find water for 1.60 euros by the restrooms.
3) Stay safe, avoid crowds.
4) Save time and money while on the airplane, bring your own eye mask. Did you know that the air masks (which were so popular in California this summer due to all of the fires and smoke in the air) can be used as eye masks as well? Well, they can, and I bought a box of 5 at my Local Dollar Store this past summer, as was able to bring them on the airplane to use as eye or air masks (if you have a cold, not a bad idea to cover your cough and wear an air mask), maybe just while you sleep. It's up to you.

5) Always bring lotion for hands and moisture for the lips.
6) Bring your own tea bags, instant coffee, sugar, creamer, stirer stick. Airlines will give you FREE hot water, but usually not FREE cold water, and they charge in excess of 3 euros for bottled water. This goes back to number 2 point, stay hydrated.
At the Dublin airport, I saved 4 euros by requesting hot water, it was FREE. At the San Francisco Airport, I requested hot water, and they only charge for the cup.
7) Bring your own food, snacks on the plane. Air France, Aer Lingus feed you, and they are delightful meals, in my opinion, plus ice cream, warm towels for the face, etc. They really pamper their passengers. Noreigian, which wasn't cheap, charges for meals, charges for seat assignments, charges for water. I was not impressed with Noreigian, if you do pay for a meal, they do seem to have a type of elitist status going, whereby they really bring them coffee, tea, wine, beer, water, food, snacks, etc. Didn't like the feeling of a class system honestly!
Bring your own fan favorites, I'm just going to throw it out there, you don't have to be rich to travel, you do need to be flexible and willing to familiarize yourself with the customs, cultures of where you are traveling to.

In my opinion, always, always, always, when you have your health, a little money, and a little time, I would highly recommend traveling. but making memories will last a lifetime.

Super Satisfying Strawberry Smoothie





There are many ways to make a smoothie, so after waiting in line at Jamba Juice yesterday and seeing a guy spend a small fortune on Ginger Shots as I was waiting for my Orange Dream Machine (Medium Size) in split cups, I told myself, "hey I have enough ingredients in my freezer and fridge to make a super satisfying smoothie." If you know me, the exact type of smoothie wasn't exactly decided upon, cause I had to see what was in the fridge and freezer and on the counter, so here goes:

1 4 ounce Yoplait Strawberry Yogurt
1/4 cup of orange juice (!00% pure orange juice, no pulp)
3 chunks of coconut (16 ounce bag found at Trader Joe's, unsweetened coconut chunks)
5 large strawberries (strawberries can be frozen if not in season)
1 very ripe banana (bananas can be frozen)
handful of blueberries (can use frozen blueberries, blackberries).

What if I wanted to make this smoothie with more protein? I would substitute the yogurt for Greek yogurt.

Directions: Place all ingredients in a blender and puree for about 30 seconds, makes one smoothie.

Fried Artichoke Hearts





One of my favorite Christmas Eve appetizers was my Grandma Rose's Fried Artichoke Hearts. I made these this year and they were a hit. No one can it just one, trust me. If you are gluten-free then utilizing gluten-free breadcrumbs, or making your own bread crumbs by toasting gluten-free bread and pulverizing into crumbs, my bread crumb mixture was the Italian Style bread crumbs that already has the garlic and other herbs and spices in the mixture. 

Fried Artichoke Hearts

4-6  Artichoke hearts (1 jar of Cara Mia artichoke hearts marinated in oil.
4    Whole artichokes (cooked, with hearts removed from center of choke)
4-6 Artichoke hearts (1 can of artichoke hearts in water)
Juice of a lemon
Olive oil
½ Cup of flour
1  Egg
Bread crumb mixture

Bread Crumb Mixture Recipe:
½ Cup of bread crumbs
¼  Cup of grated parmesan
Salt and pepper to taste
1 Teaspoon parsley
1 Teaspoon minced garlic

Directions: There are three types of artichoke hearts that you can use, a whole artichoke, cooked and cleaned, artichoke hearts marinated in olive oil, or artichoke hearts from a can packed in water.  To remove excess oil from the marinated artichoke hearts, simply place on a paper towel. The paper towel will absorb some of the oil from the artichoke hearts. You can also cook whole artichokes and remove the hearts making sure to clean out the choke. Cutting the hearts into ½ and then into 3rds. Put artichoke heart pieces into a bowl with enough water to cover and add the juice of one whole lemon. Cover bowl and soak for five minutes. Drain the artichokes and dry on absorbent paper towels, make sure the artichoke hearts are completely dry.

Halloween Caramel Corn, by cookbook author, Gina Meyers





Halloween Caramel Corn



½ cup of dark caro syrup
1 cup of light or dark brown sugar
1 cube of butter
½ teaspoon of baking soda
1 Tablespoon of Torani Flavored Pumpkin Pie Spice
½ teaspoon of salt
1 teaspoon of vanilla extract

2  quarts or 8 cups  of popped popcorn

Optional: nuts and candy corns candies

Directions in a large pot, melt, butter, add salt, brown sugar and caro syrup, pumpkin pie spice (liquid) and stir till it bowls, stir. Turn off heat and add baking soda and vanilla extract, stir again. Next, add popcorn to the large pot and coat the popcorn. Next, have a cookie sheet sprayed with butter flavored spray and add the popcorn to the cookie sheet and press flat. Bake in a 250 degree oven, stirring occasionally, every ten minutes for thirty minutes. Allow to cool, and walla, Halloween Caramel Corn. Enjoy!

Mushroom Ravioli Recipe (EASY) with Papagni Cabernet Sauvignon Wine Pairing




Mushroom Ravioli

10 ounces mushroom ravioli or cheese-filled ravioli
2 tablespoons olive oil
2 ounces shiitake mushrooms, sliced
4 ounces button (table) mushrooms, sliced
1 clove garlic, minced
1/4 cup brandy
1 cup heavy cream
1/2 teaspoon nutmeg
Salt and pepper
1/2 cup grated parmesan cheese

Directions: Prepare ravioli according to package directions; drain. Next, over medium heat, pour olive oil in a skillet and cook mushrooms until tender. Add garlic and brandy, and cook for 2 minutes. Slowly stir in heavy cream and bring to a simmer. Season with nutmeg, salt, and pepper. When cream has thickened, stir in 1/4 cup of parmesan cheese. Then, stir in cooked ravioli, and gently simmer for 1 to 2 minutes. Serve with parmesan, garlic bread, and salad. Makes 2 servings.
