I've been doing recipe testing at home & recipe rekindling lately, and while I'm enjoying reading over my late Grandma Rose's old hand-written recipes and looking through my Grandma Julie's cookbooks, (she marked her favorites and was quite proud that I was baking her biscotti last weekend. I'm really savoring this time at home during shelter in place. Though it isn't easy home schooling a teenage boy, we are managing to be each others' guinea pig in the kitchen for some of the recipe tasting. Taco Soup
Taco Soup
1 pound of hamburger or turkey meat
1 package of Taco Seasoning mix
1 medium sweet onion, purple preferred, chopped finely
1 15 ounce can of Kidney bens
1 15 ounce can of Garbanzo Beans
1 14 ounce can of Tomato Soup
1 15 ounce can of corn, drained
1 8 ounce can of tomato sauce
Directions: Brown hamburger in a medium sized skillet, add in onions and sauté. Set aside.
In a large pot, add all of the ingredients with juice, except for the corn.
May add a little water if needed, about ½ cup. Simmer and stir until completely warm.

Optional: May add tortilla chips, sour cream, black beans, salsa,
a packet of ranch dip (inside the soup), cilantro, cheddar cheese. These are all
toppers for the Taco Soup, but not necessary. Soup could also go into the crock pot.
